YEP! 💡 Oats provide sustained, brain-healthy energy, while consuming nuts can boost mental sharpness. Healthy, quick and completely customizable, this Oatmeal Energy Bites recipe is one you can commit to memory. Which add-ins will you choose?
Ingredients:
—1/4 cup crushed roasted nuts of your choice
—2 cups rolled oats of your choice
—1/4 cup mini chocolate chips
—1/4 cup dried fruit of your choice
—1 tsp cinnamon
—1/2 cup nut-based butter or sunflower seed butter
—1 tsp vanilla extract
—1/3 cup honey or maple syrup
Instructions:
1. Prep and mix dry ingredients: Crush the nuts and add them to a big bowl with your oats, chocolate chips, dried fruit and cinnamon and give them a good stir to combine.
2. Add in the sticky ingredients: Add your nut or seed butter and vanilla then stir. The mixture will be thick and a bit dry. Next, slowly add the honey or syrup a bit at a time, mixing with a spoon (or your hands) between pours. Adjust the amount of honey/syrup until you have a thick batter that holds together (but isn’t sticky).
3. Chill, roll and freeze: Place your batter in the refrigerator for about 20 minutes then simply roll it into 1-1.5” balls. Place them on a cookie tray or baking dish lined with parchment paper and put them in the freezer for about 20-30 minutes until they harden.
