We are incredibly fortunate at Shannon College of Hotel Management to have such a wonderful range of scholarships and awards presented on Graduation Day. These honours—generously donated by our industry partners, alumni, and long‑standing friends of the College—reflect the strength of our Shannon family and the pride we share in our students.

Shannon College of Hotel Management would like to extend our sincere thanks to The Address Collective for their generous sponsorship of the events associated with this year’s graduation conferring ceremony. We were delighted to welcome Michaela Hegarty and Cathal McGettigan from The Address Collective back to Shannon—both proud graduates of Shannon College—joining us once again for this special occasion.
We are also deeply grateful for their continued commitment to supporting our students. This year, The Address Collective has generously sponsored four additional scholarships for our current first‑year students, which we look forward to awarding next week.

2026 TY TASTER 🙌🏼

Last week we welcomed over 220 TY students across two sessions from schools in Clare, Limerick, Tipperary and Galway!

Every year we welcome TY students from local regions on campus to meet our students, explore our grounds, engage in live demos in Irish coffee, napkin folds, and mocktails, learn about accommodation services and guest profiling, take part in quizzes, and team building games, as well as receiving a college talk and a certificate of completion 🤌🏼

Our third and fourth year students played a blinder in pulling out all the stops for this event! The buzz around the campus was electric and it’s so great to be able to welcome younger students to explore the idea of studying a level 8 business degree in international hotel management with us.

Thank you to our students for always putting your best foot forward and thank you to the schools who travelled to join us on the day!

We hope to welcome you back in the future and hope to see many more TY students engaging in this opportunity next year 🙏🤩

A look inside our kitchen 👀 👩‍🍳

At Shannon college of hotel management, we have a full training kitchen on site where students, from the first days of year 1 will gain hands on experiences into the world of food and beverage!

Year one practical rotations include, kitchen, restaurant, front office & IT, accommodation services, and HACCP & food science.

These rotations allow for our students to test their skills, understand the industry, explore different departments and prepare for real life work beginning with their year 2 operational placements!

Within the culinary department, students will work one on one with our chefs and learn from the basics of hygiene, stations, cutting skills, food prep, service, kitchen flow, plating techniques, allergens and focus on different elements like pastry and breads!
It is so important that our students find their niche, passion and explore the industry as a whole before they step into their future careers! Some of our fabulous students fell in love with the kitchen during their first days in year 1 and have progressed into exceptional roles within the culinary arts field 👨‍🍳

During their weeks in the kitchen they will get to explore different styles of service and cooking in which they work closely with the restaurant department… this week saw our students prepare and serve an Irish breakfast buffet! 🤤 🍳 🥐

This is also an incredible opportunity for our international students to explore the Irish food scene and some of our most popular dishes 🥰

Last week we hosed our Dublin Roadshow in the
Thank you to our alumni, General Manager, Nicky Logue, and deputy General Manager, John Lynch as well as your team, for welcoming us with such incredible hospitality!

The event included a live panel discussion and Q&A with some of our Dublin based alumni! The discussion was hosted by our school liaison officer and Bcomm graduate with the class of 2020, Ms. Emma Daly.
We welcomed, Ms. Karla Murray, BBS, class of 2024. HR and Recruitment, Mr. Alan Hynes, BComm class of 2014, F&B director Intercontinental Dublin, Mr. Freddy Allen, class of 2024, trainee accountant, and Mr. Mehdi Stravens, BBS class of 2024, assistant conference & banqueting manager, intercontinental hotel Dublin.

This panel brought such a rich insight into the industry and student experience as a whole! From experience in luxury hotels and businsses across Ireland, the UK, Canada, Portugal, America, Switzerland, France, the Seychelles and Belgium they shared a wealth of knowledge and advice about the future of the industry!

Thank you for your time and for sharing your journeys from students to alumni. These insights are so imperative for future students and industry leaders!

Last week we were delighted to welcome visitors from Ryder Cup to Shannon College – Alan Evans, Director of Hospitality & Guest Experience and Tracy Deane (Class of 2016) - Senior Events and Project Manager – Ireland.

We were delighted to collaborate with the School of Hotel and Tourism Management (SHTM) at The Hong Kong Polytechnic University over several days in Hong Kong.
In December 2025, Dr Sean T. Ruane, Keith Carden, and Sarah O’Mahony attended the IMPACT2025 Conference hosted by PolyU/SHTM which focused on transforming hospitality and tourism for a sustainable future. Dr Ruane also participated in a thought-provoking panel discussion centred on sustainability in tourism and hospitality.
Shannon College of Hotel Management sourced a range of Irish produce exported to Hong Kong and China for use throughout the collaboration. These products—DK Connemara Oysters, Johnstone Beef, and Valentia Smoked Salmon—were showcased at the opening ceremony of the IMPACT2025 Conference, at an alumni event hosted by the Consul General of Ireland to Hong Kong, Jennifer Bourke in her residence, and during a food demonstration held at SHTM/PolyU.
Keith, Sean, and Sarah delivered an Irish food demonstration at SHTM titled “A Taste of Ireland by Sea and Land,” placing Irish produce and SCHM at its core. Keith prepared dishes using these exceptional Irish products, providing tastings for a full house of over 50 attendees in SHTM’s fabulous demonstration kitchen. Sean and Sarah also delivered an Irish coffee demonstration, with tastings for all students in attendance.
The demonstration was a great success, with excellent student engagement throughout. Collaboration between SCHM and SHTM staff was seamless, and we sincerely thank SHTM for their outstanding hospitality.

During the week, some of our students graciously volunteered to work at the Christmas Bazaar & Santa Experience at Carrigoran house and nursing home!

The students, accompanied by lecturer Ms Stella Sloane, worked in the kitchen making Teas/Coffees/ Mulled wine. Drove the Golf Buggy around the grounds for the kids & families as part of the Santa experience, assisted wherever they were needed and had a ball while doing so! The pictures speak for themselves! 🫶🏼🎄

We are so proud of our students and happy to be able to take part in giving back to our community, particularly around the Christmas holidays 😇
