Tray Gourmet: Be Your Own Chef in the College Cafeteria

Who doesn’t like a cheese steak sandwich? In this book Tray Gourmet by Larry Berger and Lynn Harris gives student a chance to be a chef with items found in Holmes Dining Hall. It has everything from salad dressing to desserts & beverages. Here is a recipe found in this book:

Cheese Steak (p43)

Enough roast beef slices for a good-sized sub
1 handful shredded cheese or several cheese slices
1 sub roll
Whatever you like on your subs: mustard, mayonnaise, lettuce, tomatoes, pickles, onions, peppers, hot sauce, etc.

Put the roast beef on a plate and sprinkle the cheese on top. Microwave until the cheese melts. You may have to rotate the plate for the cheese to melt evenly. Put the cheese-covered roast beef in the sub roll and add your favorite topping.

Myth or Fact? You can get the flu from getting the flu shot?

MYTH - You cannot get the flu from having a flu shot because the shot is either made with inactivated flu virus or no actual flu viruses at all. In fact, the best way to prevent from getting the flu is to get your flu shot.

Remember, our flu clinics are this coming Wednesday and Thursday in Hammond Hall from 9:00 - 2:30pm both days. All students and staff are welcome! See you there!

This dry weather is perfect for spending time outside. Did you know there is a beautiful Mass. Audubon Sanctuary, Flat Rock, less than 2 miles from campus? The easist way to accesss the 6 miles of trails is to go to the Burbank Hospital at 275 Nichols Road, Fitchburg and stay to the right of all the buildings as you head towards the far right parking lot. Legumes are a terrific food. They are an excellent source of protein and low in fat. They are nutrient dense, meaning they deliver plenty of vitamins, minerals, and other healthful nutrients relative to calories. They provide plenty of soluble and insoluble fiber. They are less expensive than meat or chicken and canned beans don’t need to be cooked, so you can make a tasty salad in no time.

Black Bean and Corn Salad

Ingredients
¼ cup of olive oil
1/8 cup of vinegar
Juice of 2 limes
½ tsp. (more or less) of Sriracha chili garlic sauce or any hot sauce you like
½ tsp. of chili powder
1 ½ tsp. of ground cumin
¼ to ½ cup of chopped cilantro
1 crushed clove of garlic
¼ tsp. of salt
Mix together the oil, vinegar and lime juice. Continue to blend till the solution is well mixed about 3 minutes.
Add the spices, crushed garlic and taste. Adjust the seasonings as needed.

Add the following ingredients to the oil and vinegar mixture
1 15 oz. can of black beans – rinsed well
1 can of Birds Eye Mexican Corn – drained
1 diced red pepper
2 – 3 diced scallions
¼ to ½ cup of chopped cilantro
¼ tsp. of salt

Mix the ingredients and let it stand for a while before serving for a fuller taste.

The summer months are a great time to enjoy being outdoors. Ticks are also the most active from April to September. If you are going to be in wooded areas or tall grasses long pants are recommended so you can pull your socks up over your pant legs. DEET insect repellant is also recommended. Check your body for ticks as soon as you get indoors, and don’t forget to check your pets too! If you find a tick on you, don’t panic! Remove it with tweezers pulling straight up and wash the skin. Antibiotics may be prescribed if the tick can be identified as a deer tick and it was attached for >36 hours. Know your symptoms of Lyme disease!

As the hot weather approaches remember to drink plenty of water to allow your body to perform its normal functions. If we lack adequate fluids we can become dehydrated and the symptoms can range from mild to severe necessitating a medical emergency. The color of your urine is a better indicator than thirst for your level of hydration. The paler your urine is the more hydrated you are, whereas darker, amber colored urine indicates dehydration. No matter how clear the water may be, it may contain Giardia and Cryptosporidium. You can’t see these parasites, but they can make you very sick!
Remember ALWAYS treat or filter water that has not been deemed safe for drinking!
