Connecting & Creating in Shelby County!

DHN Extension joined the winter UK Family & Consumer Sciences Professional Development event on 12/10. We traveled to the Shelby County Extension Office for a day of learning and networking, creating beautiful reed stars, touring the office, and engaging in the state staff meeting.

Grateful for the opportunity to connect with fellow Extension associates and specialists who support FCS programming across Kentucky! 💙

Dr. Johnson and Chef Rachel recently attended the Teaching Kitchen Collaborative conference in California, connecting with a broad group of teaching kitchen professionals including dietitians, physicians, researchers, educators, and community partners.

They explored how teaching kitchens are being used across academic, healthcare, and community settings, with sessions on using AI in culinary nutrition education, global teaching kitchen models, and participated in workshops focused on culinary skills, program implementation, evaluation, and research.

They are excited to bring what they learned back to campus and share these ideas and approaches with their students!

Howdy from Nashville! 🤠 DHN faculty, staff, and students have been learning, growing, and connecting at the annual Food and Nutrition Conference and Expo (FNCE).

The days were full of learning in emerging, evidence-based sessions, trying novel food products in the expo, and networking with professionals from across the nation. Lauren Batey and Dawn Brewer of the WiN-WiN program also presented their work along with DHN students on a variety of topics!

partnerships for durable skills and student success. Students in DHN 605: Food Systems and Society recently had the opportunity to tour farms in Georgetown, Kentucky!

They spent the day visiting Smith Farm and Elmwood Stock Farm, exploring where local food comes from and learning more about Kentucky's food producers and agricultural systems.

Meet Guinevere Weiker! She joins us in Campus Kitchen this semester as an intern though UK’s Sustainability Internship Program.

Guinevere in a junior studying Dietetics and has her Certificate in Food Systems and Hunger Studies. She is interested in community nutrition and policy related to equity in nutrition, health, and wellness and hopes to work in sustainable development and community food systems in the future.

At Campus Kitchen, she works on quantifying and increasing the sustainability of CKUK using UN Sustainable Development Goal 3: Good Health and Wellbeing and Older Americans Act. She helps to plan nutritionally adequate meals for food insecure seniors in Lexington.

Some fun facts about Guinevere: she is originally from Northeast Connecticut, and her favorite food is raspberries!

We are grateful for her commitment to DHN and CKUK’s efforts!
