CFANS Alumni Global Learning Adventures The CFANS & CEHD Alumni Global Learning Adventure to Italy is the greatest way to learn about Italian people and culture. Open to all alumni and friends.

CFANS Alumni Global Learning Adventures is an exciting program that will take alumni and friends around the world to get a taste of a student learning abroad experience. We are teaming up with CEHD for our third journey: Exploring the Science of Food, Wine and Renaissance, November 3-13, 2017. From Cinque Terre to Chianti, you will learn about organic winemaking, traditional farming methods, modern enology and land management practices along spectacular views of the Mediterranean coast. Tour an olive grove, visit a Pecorino cheese producer in Tuscany and a Chianina cattle farm. Led by Mike White, a Morse Alumni Distinguished Professor in CFANS and head of the Department of Animal Science. Yesterday in Levanto we spent the morning learning how olive oil is made—from growing olive trees to harvesting and pressing the fruit into the oil that Italians consider an essential part of their daily diet.

In Luguria alone, there are 42 different types of olives and 100 types in all of Italy. The preferred olive type in Levanto is called the Taggiasca—known for its gentle and smooth taste that’s not overpowering. This is because this Lurgian olive has lower percentage of polyphenols and is more purple in color. However, if you venture to other parts of the country you might find olive oil that is sharper in taste with a peppery overtone. This flavor is because greener olives are used which contain a higher percentage of polyphenols.

After harvesting the olives, they must be washed and pressed within 48 hours in order to squeeze the most oil from the fruit—this also ensures the olives are fresh.

Our Story

Alumni Global Learning Adventures (AGLA) is an exciting program that takes alumni and friends around the world to get a taste of a student learning abroad experience. The College of Food, Agricultural and Natural Resource Sciences (CFANS) is teaming up with the College of Education and Human Development (CEHD) for our next journey: Exploring the Science of Food, Wine and Renaissance, November 1-11, 2019. The CFANS & CEHD Alumni Global Learning Adventure is an amazing way to experience and learn about different cultures. The November 2019 program takes you on an eleven day journey through the most spectacular areas of Italy: Cinque Terre, Piedmont, Venice, and the Veneto region. Taste local olive oils, tour renowned wineries, stroll through ancient streets, and get a taste of Italian culture. The program is led by Mike White, Professor and Associate Dean of Academic Programs and Faculty Affairs and Mary Buschette, Director of Alumni and Constituent Relations in CFANS and Lori Koch, Professor and Director of International Initiatives for CEHD.
