คือ เนื้อสัตว์ที่ผ่านการแปรูปด้วยวิธีต่างๆ เช่น หมักเกลือ หมักจุลินทรีย์ รมควัน หรือทำให้แห้ง
กระบวนการเหล่านี้ช่วยยืดอายุอาหาร
