The Alumni Series at Ernest's Dining Room - NAIT is back for its third year! ✨
First up, on September 18, is Christine Sandford (Culinary Arts ‘08) and Roger Letourneau (APP-Cook ‘10), co-owners of Lessig Ferments and Vagabond Pop-ups.
Christine initially was interested in a career in design, but her career interests took an unexpected turn after a trip to Europe. Inspired by the restaurants there, she realized a career in culinary would be the perfect way to blend her passions for creativity, design, food, and entertaining, which led to her enrolling in NAIT’s full-time culinary arts program.
For Roger, before culinary, he considered careers in both accounting and music – one based on his analytical mind and the other on his desire to be creative. But it was through cooking, particularly fermentation, that he discovered a unique way to combine creativity, problem-solving, and precision. An apprenticeship in Paris cemented his passion and opened his eyes to the immense opportunities the culinary world could offer.
Both Christine and Roger know firsthand that career paths are rarely linear, and they hope their experiences will inspire students to explore the many opportunities within the culinary industry. They look forward to returning to campus for the Alumni Series to connect with the next generation of culinary professionals, sharing the lessons, insights, and experiences that have shaped their careers – all while creating a memorable meal for guests.
