Many companies are shifting away from artificial dyes and going colourless to avoid more costly and perishable natural tints. McGill Desautels Professor Yu Ma explains that this change could go in two directions. While taking away colour may lose the "punch in attracting people's attention," Ma suggests that this shift could draw in more health-conscious consumers if marketed as authentic and natural.
