Cool Climate Oenology and Viticulture Institute

Cool Climate Oenology and Viticulture Institute Brock’s Cool Climate Oenology & Viticulture Institute provides research, continuing education & outreach to the grape & wine industry.

Our vision is to be Canada's centre of excellence with respect to the generation and dissemination of knowledge on cool climate viticulture, oenology, wine business, policy, wine tourism and wine culture.
..

Established in 1996, in partnership with Grape Growers of Ontario and the Wine Council of Ontario, CCOVI is an internationally recognized institute focused on research priorities of Canada

’s grape and wine industry and the education and outreach needs of that community. As the institute has grown, we’ve taken our research and services beyond the science disciplines of oenology and viticulture and expanded our activities to look at all areas of the grape and wine value chain such as wine business, policy research and agri-tourism. As CCOVI has grown, three important areas have been at the core of what we do. We’ve focused our research on industry needs that help increase the growth, profitability and sustainability of the Canadian industry; provided education opportunities to train the industry leaders of tomorrow; and provided international conferences and events that have helped raise the profile of Canadian wine globally.

More than 200 high school students and their science teachers from Hamilton and Niagara visited Brock today as part of Biological Sciences Day to learn more about academic and experiential learning opportunities available at the University.

During their time at CCOVI, students took part in a grape juice chemical analysis to determine sweetness and acidity of Sauvignon blanc.

They also took part in a sensory lab where — under a red light to visually mask what they were testing — they were tasked to identify various aromas in food and non-alcoholic beverages.
