An extraordinary celebration of culture, identity, and passion. 🌴✨

Our Chef of the Day, Renée Mosley, brought her Caymanian heritage to life through an exceptional 8-course Caribbean tasting menu, blending flavors from across the islands into a true culinary story.

From the refreshing Swanky to the delicate bag mango and guava dulce, every element paid tribute to her roots and her Cuban grandmother—reminding us how powerful food can be in carrying identity and love across generations.

Her standout Smoked Butter Langoustine, inspired by Blue by Eric Ripert, reflected both technical excellence and her growth as a young chef.

Every great pastry chef has a first memory that sparked it all. 🍮

We sat down with three of our faculty: Chef Yann Muriset, Chef Nicolas Belorgey, and Chef Jeremy Plassat, and asked them about their most meaningful memories when it comes to pastry.

What followed were reflections on first apprenticeships, childhood desserts, and the defining moments that shaped their passion for the craft. Because behind every technique, there's an emotion. And it is this emotion that marks the very beginning of the journey.

🫒 Where an ingredient becomes a gateway to culture, history, and craftsmanship.

Our students recently had the privilege of attending an Olive Oil Sensory Masterclass led by Karpadakis Emmanouil, Sensory Evaluation and Olive Oil Expert at Terra Creta, and Nicole Stefanidou, representing the Greek Embassy.

This immersive session offered a comprehensive journey into the world of olive oil, from its production processes and IOC & EU quality standards, to its chemical composition and professional sensory evaluation techniques. Students also explored its significance as a key source of monounsaturated fats, its growing relevance in modern nutrition and medicine, and its indispensable role in both culinary and pastry arts.

A standout moment of the masterclass was the live tasting experience. Students engaged all their senses, evaluating aromas, pairing olive oil with tomatoes and potatoes, and even discovering its unique impact when paired with vanilla ice cream. 🍦

More than a technical learning experience, the session reinforced an important message: exceptional ingredients carry stories of heritage, sustainability, resilience, and centuries-old traditions.

Meet "Essence d'Été" 🌸

The dish that won first place at Cook’n’Battle 2025, created by our students, Linnèa Sjöblom and Christopher Oprean, is a study in precision, restraint, and intent.

Tuna tartare. Avocado. Edible flowers. A vibrant green oil bringing colour, balance, and definition to the plate. Each element is deliberate; nothing is incidental.

This is what happens when technical mastery meets clarity of vision, when students move beyond ex*****on and begin to express a point of view. The name says it simply: the essence of summer, on a plate.

Chef Franck Giovannini inspires our students! 💡

Recently, our students had the privilege of engaging with chef Franck Giovannini, the visionary behind the three Michelin-starred Restaurant de l’Hôtel de Ville de Crissier, a kitchen he has called home since 1995.

What sets chef Giovannini apart is not only his extraordinary achievements but also the mindset behind them. Originally from Tramelan in the Bernese Jura, he never pursued accolades for their own sake. Instead, he was guided by a deep sense of responsibility and a desire never to disappoint others, values that quietly propelled him to the pinnacle of global gastronomy. 🌍

In a thought-provoking exchange with our lecturer, Zaher Baraky, the conversation explored AI in hospitality, personal growth, and the balance between attitude and hard work, highlighting that true excellence comes from continuous development and the harmony of both.

Celebrating excellence at Millésime 2026!

We are proud to celebrate the outstanding achievements of our community members, Phuong Linh Nguyen (César Ritz Colleges Switzerland, coach) and Gwanho (Andrew) Lee (Culinary Arts Academy Switzerland, competitor), at Millésime 2026, hosted by EHL.

Bringing together nine teams from eight countries under the theme 'Vina Mundi', the competition highlighted the diversity of wine regions worldwide. Representing Switzerland alongside and , the team advanced to the final against the University of Cambridge and secured 1st place with an exceptional performance.

Judged by leading experts, including Paolo Basso, Salvatore Castano, and Roxane Fenal, the experience was further enriched by a conference from Mathieu Jullien (LVMH Vins d’Exception) and a visit to the Lavaux vineyards.

This achievement reflects the excellence and collaboration fostered across our institutions.

Congratulations to the team on this remarkable success. 🍷

Did you know that with the support of the Inicio Foundation, Swiss Education Group alumni are launching educational programs in underserved areas, creating zero-waste initiatives in professional kitchens, building dyslexia support systems in Africa, and empowering marginalized women with hospitality skills. These aren’t just projects – they’re proof that our education creates change far beyond school walls, into 17 countries.

Now it's your turn! We're asking our community to come together and make an impactful change again!

On May 31st at 2:00 PM, Inicio Foundation is hosting the Smart Race – a unique fundraising event that’s as challenging as it is fun!

Over 6 km, teams of 3-4 participants will:
•Solve intellectual puzzles at checkpoints
•Complete creative challenges
•Record social media content to amplify our impact
•Push physical and mental boundaries together.

Three prize categories will celebrate different strengths:
