MATILDA is a 36-month research project funded by the Hellenic Foundation for Research and Innovation (H.F.R.I.) in the framework of the "3rd Call for H.F.R.I. Research Projects to support Faculty Members and Researchers". The objective of the MATILDA project is the assessment and characterization of the effect of fat and sugar on the survival of the foodborne pathogen Salmonella enterica in low-water activity model food matrices. For this purpose, the survival behaviour of the pathogen will be quantitatively described, and underlying mechanisms will be elucidated through lipidomics and gene expression analyses.
