Organization of a One-Week Certificate Course on "Value Addition of Fruits and Vegetables" by the Department of Horticulture, College of Agriculture, Navsari Agricultural University, Bharuch. Under the guidance of the Honorable Vice-Chancellor of Navsari Agricultural University, Dr. R. M. Naik, and with the direction of Dr. D. D. Patel, Principal of the College of Agriculture, and Dr. Vinay K. Parmar, Professor and Head, a one-week certificate course on "Value Addition of Fruits and Vegetables" was organized by the Department of Horticulture, College of Agriculture, Bharuch, from 10/08/2026 to 17/08/2026. The noble objective of this course was to prevent post-harvest losses (spoilage after cutting) of fruits and vegetables and to encourage new entrepreneurs to start value-addition businesses. During this course, a total of 09 entrepreneurs from different districts of Gujarat, who wish to start an industry or business in the value addition of fruits and vegetables, were provided training. In this certificate course, Dr. Sandeep L. Sangani, Associate Professor of the Horticulture Department and Course Director, provided detailed information on making various value-added products from fruits and vegetables, such as candy from amla (gooseberry) and watermelon rind, fruit jams, various types of fruit and vegetable appetizers, tomato ketchup, tomato chutney, date-tamarind chutney, and different types of pickles. He taught these practically by preparing them in the laboratory of the Post-Harvest Technology section of the Horticulture Department. Furthermore, Dr. Darshana Chaudhary, Assistant Professor, practically demonstrated the method of preparing grafts (propagation) from mango and guava plants. The new entrepreneurs participating in this certificate course will establish their new businesses and make a distinct contribution to the state and national economy.
