FOOD NEWS | CLSU-DFST Hosts 5th Food Technology Seminar Series on Nanotechnology Applications in Food and Packaging

The Department of Food Science and Technology (DFST) of Central Luzon State University successfully conducted the 5th Food Technology Seminar Series titled “Novel Strategies in the Application of Nanotechnology in Food and Packaging” on March 25, 2026, at the Academic Affairs Amphitheater. The seminar gathered students, faculty members, and researchers interested in emerging innovations in food science and related disciplines.

The invited speaker, Dr. Turgay Çetinkaya, Professor from the Department of Aquatic Biotechnology and Genomics of Istanbul University, Turkey, shared his expertise on the latest developments in nanotechnology and its promising applications in food systems and packaging. During his lecture, Prof. Çetinkaya highlighted how nanotechnology can improve food safety, extend shelf life, enhance packaging functionality, and contribute to sustainable food production.

The two-hour seminar provided participants with insights into interdisciplinary approaches combining food technology, materials science, and biotechnology. An engaging open forum followed the lecture, allowing participants to raise questions and exchange ideas on the practical applications of nanotechnology in their respective fields.

The event was co-sponsored by the Philippine Association of Food Technologists Inc. Zeta Chapter, demonstrating its continued support for professional development and knowledge sharing among future food technologists. Representatives from various academic fields including food science, textile technology, chemistry, nanotechnology, and fisheries attended the seminar, reflecting the growing importance of collaborative research in addressing modern food challenges.

Through this initiative, the DFST reaffirmed its commitment to providing relevant academic activities that expose students and faculty to global scientific advancements and strengthen partnerships with international experts. The seminar series continues to serve as a platform for promoting innovation, research collaboration, and excellence in food science and technology education.

This International Women’s Month, we proudly pay tribute to Maria Ylagan Orosa (1893-1945), a pioneering Filipina food scientist, inventor, humanitarian, and war heroine whose legacy continues to inspire generations of food technologists.

Our third-year BS Food Technology students recreated selected baked products using historic recipes from Appetite for Freedom: The Recipes of Maria Y. Orosa. This activity is not only a celebration of her contributions to food science, but also a reminder that science can be a powerful tool for nation-building and service to humanity.

Maria Orosa dedicated her life to using science to address hunger, malnutrition, and food security. After finishing her studies in pharmaceutical and food chemistry abroad, she returned to the Philippines with a mission: to help Filipinos become self-sufficient by maximizing indigenous crops and resources. She developed over 700 recipes and innovations including banana ketchup, cassava flour, calamansi powder, and nutrient-rich products such as Soyalac and Darak to fight malnutrition.

Her work went beyond the laboratory. During World War II, she courageously used her food innovations to help save lives by secretly providing nutrient-dense foods to prisoners of war and civilians suffering from starvation. Her life demonstrated that a food scientist can also be a hero—one who uses knowledge not only for innovation but also for compassion and patriotism.

Today, our students honor her legacy by bringing her recipes back to life—transforming history into learning, and learning into inspiration.

As we celebrate women in science this March, may Maria Orosa’s legacy inspire us to believe that innovation begins with our own resources, that science finds its purpose in service to others, and that women have the power to lead transformative change in Food Science.

From the past to the present, her legacy lives on in every product we develop, every innovation we pursue, and every student we inspire.

This activity also serves as the kick-off event of the project entitled "Reimagining the Life-Saving Recipes of the First Filipina Food Scientist Maria Orosa: A Gender and Development Approach to Food Heritage Innovation," funded by the University Gender and Development (GAD) Office. Through this initiative, we aim to further highlight the important role of women in food science, promote food heritage innovation, and inspire future food technologists to continue her legacy of science in service of society.
