🔬 Special Issue Topic: How Food Processing and Preservation Alters the Organoleptic and Nutritional Qualities of Foods
Both conventional and emerging food processing and preservation
techniques such as 🔥 thermal treatments, ❄️ freezing, 🌊 high-pressure processing, ⚡ pulsed electric fields, 🔊 ultrasound, and 🧫 fermentation play a crucial role in ensuring food safety, stability, and availability. At the same time, they significantly affect sensory attributes and nutritional quality of food products.
🎯 The aim of this Special Issue is to bring together original research articles, review papers, and short communications that:
✔️ explore mechanisms of quality changes during food processing and storage
✔️ address food matrix interactions and structure–function relationships
✔️ present innovative technologies and strategies for maintaining or enhancing sensory and nutritional quality
📌 Topics of interest include (but are not limited to):
🔹 thermal and non-thermal processing methods (HPP, PEF, ultrasound)
🔹 biopreservation and fermentation approaches
🔹 drying, freezing, and modified atmosphere packaging
🔹 nutritional degradation or enhancement during processing
🔹 sensory evaluation, consumer perception, and acceptance
🔹 structure–function relationships in processed foods
🔹 strategies for quality retention during storage
