FS 4930 - Food Systems Seminar II

This week, students in Food Systems Seminar II headed to in Shelburne for a hands-on workshop exploring grazing management and farm-to-table eating!

Hosted by Corie Pierce of Bread and Butter Farm and Mike Proia of Blank Page Cafe, students got an inside look at sustainable farming practices and the connection between agriculture and the food on our plates. 🌾

A huge thank you to the Agrihood Collective, Bread and Butter Farm, and Blank Page Cafe for making this workshop and dinner possible at no cost to our students or UVM, with support from the Lattner Foundation! 💚

Big wins for CALS! 🏆

Congratulations to the five UVM Dairy Challenge Club undergraduates who represented UVM at their regional competition this week! 🎉

MacKenna Weaver was part of the first-place team, while Abby House helped lead her team to a second-place finish. 🥇🥈 Gabriela Galvez, Katie Nelson, and Ella Gingras also did an amazing job representing UVM!

💗 Seeing pink in the classroom for a great cause! 💗

Last week, Todd Pritchard and his students in NFS 1033: What’s Brewing in Food Science participated in a Pink Out the Classroom event to raise awareness for breast cancer. 🎀

🍁 CALS HAS A CLASS FOR THAT 🍁

ALE 2990 A - Agr, Lndscp & Envir: Regenerative Grazing

On Monday afternoons, the CALS' Regenerative Grazing class hops into a couple of white vans, and drives to a local farm.

On Oct. 5, the class visited Health Hero Farm in South Hero. The farm raises British White beef cattle using management-intensive rotational grazing, with the goals of humane animal care, human nutrition, soil health, forage production, and water quality.

Alongside farmers like Health Hero's Joan Falcao and Robert Fireovid, and with instruction from UVM Extension Lecturer Juan Alvez, students got to practically apply the scientific principles they're learning about regenerative grazing.

They scored manure, identified forage species, quality, and diversity, and assessed soil erosion and compaction. And, of course: they (tried to) pet the cows!

On Wednesday, the Alumni Association hosted the 2026 George V. Kidder Outstanding Faculty Award and Lecture celebrating Dr. Lizzy Pope, who presented "Does Protein Maxing Make You a Nutrition Professor?"

Throughout the lecture, Pope discussed her teaching methods, the people who inspire her, diet culture, and the current trend of “protein maxing.” She identified Taylor Swift and Beyoncé as her biggest inspirations when it comes to delivering lectures, describing them as master entertainers. Pope draws inspiration from their ability to engage and connect with their audiences, incorporating similar techniques into her own teaching. Her approach has received positive responses from students, demonstrating how entertainment and audience engagement can make lectures more effective and memorable.

Please join the Plant Biology Department for our James Marvin Seminar featuring Dr. Erika Moore-Pollard, Postdoctoral Researcher in the Heyduk Lab at the University of Connecticut.

Dr. Moore-Pollard will present “Genomic Insights into Evolutionary Complexity in Sunflowers and Bromeliads.”

Her talk will explore the genomic foundations of evolutionary complexity in flowering plants, drawing on research in the sunflower family (Asteraceae) and bromeliads. Her work integrates phylogenomics, comparative genomics, and systematics to investigate how hybridization, polyploidy, and adaptation influence plant evolution, photosynthetic metabolism, and functional trait diversity.

Following the seminar, please join us from 2:00–2:30 p.m. in Jeffords 111 for refreshments and conversation.

Vermont students grades 3-9 who are (or who could be!) excited by science, technology, engineering and math (STEM) can now sign up for the Fall 2026 STEM Showcase at the University of Vermont campus.

It's scheduled for Saturday, Nov. 7 from 10 a.m. to 12:30 p.m.

Every semester at UVM, STEM Ambassadors create unique programming based on their majors and interests, which they then present to local youth.

This fall, the STEM Ambassadors are presenting workshops on the following topics:

DNA Detectives: Uncovering the Helix
Zap! Crackle! Think! Exploring the Nervous System
Surviving the Splash: Tsunami Science
Power from the Pantry: Building Food Circuits
