As an R1 research University, SIU is home to research that pushes boundaries and tackles real-world challenges.

🔬 In the latest R1 Minute, Lahiru Jayakody, associate professor in the School of Biological Sciences and Fermentation Science Institute, explains how genetically engineered yeast can consume plastic waste and transform it into consumable protein. The end result is a fully edible "microbite" cookie designed to help address both pollution and food sustainability challenges.
