Today is National Eat Your Veggies Day!
Here is a fun reminder that potatoes are a vegetable and can be quite healthy for you! Potatoes are a great source of potassium (some varieties containing more potassium than bananas🤯), Vitamin C, Vitamin B6, as well as dietary fiber, and some iron and protein content. Purple potatoes are a great source of cancer-fighting antioxidants! Potatoes are also generally the most affordable and accessible produce, making them a serious bang for your buck!
The only caveat is we tend to deep fry our potatoes or load them up with plenty of butter, sour cream, and heavy salt which is what gives them a bad rap for health standards. But all good things come in moderation, and healthy fats are also very important!
So today, make sure you take your health into your own hands and eat some POTATOES!!!
