🐝 Our first beekeeping class is THIS FRIDAY! 🌻

Join us in the UIC Nutrition Teaching Garden for Introduction to Honeybees with expert beekeeper Caroline Corboy of the Chicago Honey Co-Op.

📅 Friday, August 28
⏰ 9:30–11:00 a.m.
📍 AHSB Room 622 + UIC Nutrition Teaching Garden

We’ll head out to the hives to learn about honeybees, pollination, hive health, and the basics of keeping bees right here on campus. 🐝

Open to all interested UIC students and staff. No beekeeping experience needed!

Long sleeves, long pants, and closed-toe shoes are required. Bee veils and gloves will be provided.

Summer is here and the black swallowtail caterpillars have arrived in the UIC Nutrition Teaching Garden once again! 🐛

If you’ve noticed munch marks in our dill lately, these pretty caterpillars are the reason… and that’s surprisingly good news! 👄 🌱 🍽️

Black swallowtails have a special relationship with plants in the carrot family, including dill, fennel, parsley, and carrots. Female butterflies will lay their eggs on these plants because the caterpillars rely on them as a food source to grow. After several weeks of feeding, the caterpillars form a chrysalis before emerging as adult butterflies.

And though they nibble on our dill, they contribute something even more valuable to the garden: biodiversity. Adult butterflies help support pollinator populations, pollinate flowering plants, and become part of the healthy ecosystem that makes our garden thrive.

So in this teaching garden, we view a few chewed leaves as a sign that the garden is doing exactly what it was designed to do: provide food for our hungry UIC students seeking physical and mental nourishment, AND for hungry wildlife that are part of our existing ecosystem . 💚🤎 ♻️

Summer is in full swing in the UIC Nutrition Teaching Garden! 🌱

So far this season, Chef Renea, Lab Manager Emily, and our Garden Volunteers have been harvesting strawberries, raspberries, snow peas, garlic scapes, spinach, lettuce, radishes, herbs, and more. These fresh, late-spring ingredients will soon become part of the hands-on learning experience for our HN 110 students as they explore connections between food, nutrition, and sustainable food systems this summer in our lab and garden.

HN 110 summer students met for the first time yesterday. Despite a rainy start, we had a productive first lab and are looking forward to getting out into the garden next week! 🍓
