As we are gearing up to get the meat lab back opened, our new meat science faculty member, Dr. Lindsey Decker, is busy taking students on tours of local meat plants for meat science courses. Students from ASCI 171 toured Harris Ranch Beef today in Selma.

Thank you Harris for opening your tours to our students.

Saturday was Iron Chef. Students from various universities are teamed up and given an industry mentor. They are then tasked with developing a product to meet the challenge given to them. This is always a surprise so there is no ability to prep for it. For the first time for this competition, students were tasked to make pet food treats. They learned a great deal about regulations around pet food. Thank you to Cargill for sponsoring this event. We wrapped up the evening eating steak at the Big Texan. No one took on the 72oz steak challenge though.

Day 1 & 2 of Tours & RMC - A little late in getting this posted, but we’re having a grand time in Texas. On Thursday, we visited Buc-ee’s and the American Quarter Horse Association Hall of Fame and Museum. Friday we received an amazing tour of the Meat Lab from Dr. Hope Hall and of the meat chemistry labs and university farm from Dr. Lindsey Decker. Dr. Decker will be joining the Fresno State Meat Science Program with Dr. Amanda McKeith in August. We rounded out the days with Quiz Bowl Practice.
