The Institute for Food Safety at Cornell University The Institute for Food Safety at Cornell University (IFS@CU) cultivates food safety knowledge.

By cultivating food safety knowledge through applied research, extension, and outreach, the Institute for Food Safety at Cornell University (IFS@CU) is helping the food industry meet federal regulatory requirements and produce safe products. Located in the fabulous Finger Lakes, the IFS@CU operates out of Cornell AgriTech in Geneva, NY. The Cornell AgriTech community comprises research scientists

and extension experts from across the fields of food science, horticulture, plant breeding and genetics, plant pathology and entomology, making it an ideal environment for the IFS@CU as it proactively works to support the food industry in addressing food safety issues to prevent illnesses and outbreaks. The IFS@CU cultivates food safety knowledge through collaboration with the following programs:
• The Produce Safety Alliance (PSA);
• The National Good Agricultural Practices (GAPs) Program;
• The Food Safety Laboratory and Milk Quality Improvement Program (MQIP);
• The New York Integrated Food Safety Center of Excellence;
• The Dairy Extension Program;
• The High Pressure Processing (HPP) Validation Center; and

Nearly every year, Cornell dominates at the Institute of Food Technologists Student Association product development competition, an annual event where student teams develop a new food idea and carry the concept through to marketing and production.

This year was a record-setting performance. Multiple food science student teams walked away with top honors at IFT FIRST, which stands for Food Improved by Research, Science and Technology, July 13 to 16 in Chicago.

Peer mentoring is a key to Cornell food science teams’ success, according to Gavin Sacks, professor of food science and chair of the Department of Food Science in the College of Agriculture and Life Sciences at Cornell University.

“The students are teaching each other, then the new ones go on to mentor other people. For 17 years straight Cornell teams have qualified for the finals,” Sacks said. “We have a hallway in Stocking Hall with posters from winning teams. The students walk past that and they know it could be them next.”
