THE LEGACY OF THE GUNNISON MASSACRE with Larry McDonald

On the 167th anniversary of the Gunnison Massacre, participants will learn about Captain John Williams Gunnison, the Gunnison-Beckwith Expedition and the circumstances and legacy of the Gunnison Massacre. Larry McDonald, a distant relative of Captain Gunnison, will present a slideshow, and all participants will receive a memento honoring the victims of the massacre.

Local amateur historian and researcher Larry McDonald will explore some of the mysteries of Gunnison Country through a slide show and historical artifacts. Who really founded Gunnison? Why was Gunnison split into two towns? How did the Crested Butte mine come to be called the Jokerville? Who is really buried in the mass grave in Crested Butte? When did Cattlemen's really begin? What really happened to the LaVeta Hotel? These questions, and others, will be discussed and explored.

In this class students will learn a "no waste" approach to cooking, baking, and preparing food. We will learn what it means to eating with the seasons while making simple meals that can easily be prepared. We will learn best techniques for long term food storage including dehydrating, freezing and pickling and fermenting vegetables. We will also learn how the basics of sourdough baking.

Required Materials: Ball Canning Back to Basics: A Foolproof Guide to Canning Jams, Jellies, Pickles and More

This session will cover the principles of safe food handling for home food preservation. Students will learn how to plan and prepare for canning projects and will get hands-on experience canning and dehydrating fruits and vegetables that are in season; such as peaches, apples, tomatoes, and peppers. We will make jams, salsas and sauces using mostly organic ingredients. There will also be an emphasis on minimizing food waste and reducing resource consumption during the preservation process, as well as learning how to source foods locally. Each student can expect to leave with 4-5 items preserved by the class and a belly full of food.

This 8-session class is an introduction to the Spanish language. It introduces students to basic vocabulary and conversation with other adults in an active and fun learning environment. It is designed for the beginner second language learner who has never studied Spanish or wants to review from the very basics. The class includes activities, speaking practice and some homework assignments. Opportunities for interaction with native speakers may take place. No text required; hand-outs will be used. A dictionary is not required but helpful: University of Chicago Spanish/English Dictionary available at the Bookworm.

As the language most used in the Deaf community, this class is a foreign language class offering a thorough introduction to American Sign Language (ASL). The class is made up of a series of weekly lessons, practice sessions and community visits/outings to learn basic sign vocabulary. Come enjoy learning about the different grammatical structure of ASL, some fingerspelling and an introduction to the culture of deaf people. The class will be taught using ASL through activities and conversation. It will include interaction with Deaf individuals for real time conversation as well. Students who are studying to enter the field of education can benefit greatly from this class as relates to the other applied uses of a signed language with children and people with certain other disabilities.

Wednesday at Western Cochetopa Park Trip- July 15th, 2020

The Cochetopa Park trip explores some of the less-known aspects of the Gunnison Country geology. Discuss a little-known precious metal mine, the Maple Leaf, and visit one of the largest uranium mines in the country for its time, the Los Ochos. We will explore some of the very ancient history of the Gunnison area, dealing with a time when Gunnison was off-shore and not even a part of the North American continent. We will also visit an unexplained historical mystery that occurred many years ago. Later in the trip, we will examine the volcanic history of the Cochetopa Park area, and then, if time allows, we will drive back on the famous Doyleville Cutoff Road and see other features such as volcanic necks and great views of Tomichi Dome and Fossil Ridge. Bring extra water and snacks. Some hiking up roads and slopes is required, but less mobile people can still enjoy most of this trip.

We are now accepting course proposals for our Fall 2020 catalog!

Courses offered through Extended Studies for the Fall Catalog are diversified and cover a broad spectrum of interest for our campus as well as for the community. We welcome all ideas that enrich learning, so do not hesitate to submit a proposal based on your specific expertise, interest expressed by people you know personally, as well as what you think would be a good topic for our unique mountain community. We can cater to almost any idea you may have!

To request a course proposal form, please email [email protected]. In order for your course to be considered for this catalog, please return a fully completed form by Wednesday, July 15, 2020.

Important Note:
• Courses will start no earlier than August 31, 2020 and end no later than November 16, 2020.
o Extended Studies Fall catalog courses begin 2-3 weeks after the main campus classes start and end within 2 weeks before final exams week.
o Classes begin and end earlier this year than previous school years
• Due to COVID regulations at this time, courses need to be created with an online capability/option.
o Instructors will have access to Canvas, Zoom, etc. for their courses with support from Extended Studies

Join in on a local, full-day hike to the summit of South Baldy (12,380’) and Middle Baldy (12,598’) Mountains in the West Elk Wilderness. The group’s primary objectives are to experience great views, a sense of accomplishment, a shared adventure and a greater understanding of the local topography and surrounding wilderness areas. The hike includes an elevation gain of 1000-1500’, includes off trail travel and is considered strenuous. Please bring a daypack containing one to two liters of water, appropriate footwear for hiking, wind and rain jackets, warm hat, layers of clothing, additional snacks, camera, and sun protection (sunscreen, sunglasses, sun hat), as well as a walking stick or trekking poles.

Take a historic journey through one of the least-known areas of the Gunnison Country. Head to Blue Mesa Reservoir for a talk on water and the four historic towns underneath the reservoir. From there, participants will travel to the great mining camp of Lake City and visit to the Mountaineer Movie Theater, Hinsdale County Museum, beautiful Lake San Cristóbal and the Alfred Packer site. Participants will enjoy lunch in Lake City and then travel on to the famed Black Canyon with its rich railroad history via the seldom used Lake City Cutoff, and then back to Gunnison.

Saddle up with experienced guides to explore the West Elk Mountains. Participants are introduced to the grooming and saddling of their horses, then journey into one of the most spectacular areas of the Rockies on a scenic, two-hour trail ride. Participants should wear long pants and closed toe shoes, and bring gloves, jacket, hat, insect repellent, sunscreen, water bottles, and snacks. Participants must be able to sit on a horse for two hours at elevation of 8,000-10,000’.
