• Culinary Arts Management will get you into so many more dimensions of the culinary arts.

There are many paths you can take in the bachelor’s program curricula, each leading to amazing opportunities in the foodservice and hospitality industry. You’ll enhance your culinary skills and knowledge; take a variety of business-related courses; explore other countries, cultures, and their foods through language and history courses; hone your leadership skills; and customize your education expe

rience with exciting electives, concentrations, and travel opportunities.

• Baking and Pastry Arts Management will greatly expand your horizons in baking and pastry arts. You will enrich your skills and knowledge in baking and pastry techniques; study business principles; learn about other countries, cultures, and their foods through language and history courses; sharpen your leadership skills; and tailor your education experience with exciting electives, concentrations, and travel opportunities.

• Culinary Science will advance your skills in the kitchen and put you on the path to becoming a highly sought-after culinary professional. You’ll learn how to prepare culinary-quality product for small- and large-scale systems using a science-based understanding of food safety and quality; participate in product development projects and culinary science labs; and use sensory evaluation techniques to guide the product development process from concept to delivery.

• Applied Food Studies will prepare you to make an impact—and become an influential leader—in the food profession. You'll gain the communications skills and confidence to lead and influence food policy; analyze food studies concepts through ecology, history, and anthropology; participate in and conduct hands-on projects related to food studies; apply knowledge of contemporary global food studies to real-word issues; and enhance your learning through electives and travel experiences. Focused Concentrations

• Advanced Wine, Beverage, and Hospitality is your ticket to expertise in an industry segment that often drives a major percentage of a restaurant’s profits. You’ll spend a full semester at the CIA’s California campus in the ideal setting for studying wine—the world-famous Napa Valley. There you will explore and experience the amazing California north coast wine-producing areas, immerse yourself in advanced-level wine studies, spirits and principles of mixology, and event beverage service and planning.

• American Food Studies: Farm-to-Table Cooking prepares you for a greener future that supports the growing belief that fresh, local foods create the best dining experiences. Guided by legendary chef Larry Forgione, you’ll spend a full semester at the CIA’s California campus studying farm-to-table principles in the heart of the Napa Valley. You will plant and nurture crops in the Greystone gardens; source ingredients from local farms, fields, and forests; and develop menus to serve to the public in the college’s Conservatory Restaurant.

• Latin Cuisines gives you a valuable specialization in a cuisine that is one of the hottest in the industry thanks to heightened consumer demand and demographic shifts. You’ll spend a semester at the CIA’s exciting campus in San Antonio, TX, where you’ll discover the unique ingredients, culinary techniques, and cultural traditions that span the many rich regions of Latin America, and learn from expert faculty and visiting Latin cuisines instructors like award-winning chef Rick Bayless. Elective Travel Opportunities

• China—Explore the wonders of China and gain incomparable insight into the culture and culinary traditions of the world’s most populous nation. You’ll sample the country’s regional cuisines, visit growers and producers, learn from food and wine experts, and experience some of China’s natural and historical treasures.

• France—This trip offers fantastic opportunities to explore food production and consumption within a unique history and setting. You’ll learn about the relationships between food and wine through culture, history, and terroir; travel through France’s Champagne, Normandy, and Alsace regions; and visit local markets and wineries.

• Italy—See the industry in action and explore many regions across this culinary mecca as you enjoy delicious food, fine beverages, and fresh products. You will meet passionate professionals and entrepreneurs eager to share their knowledge and insights, and visit a number of culturally significant locations such as ancient ruins and museums.

• Spain—Gain fresh insights on the foodservice industry and change the way you see the world. You’ll experience unforgettable meals, fine wines, and fresh agricultural harvests; explore some of the country’s most famous cities, culinary regions, and historic landmarks; and get an up-close-and-personal understanding of Spanish culture and cuisine.
