The last few Foods classes focused on potatoes, grains, legumes, and beans! Lots of yummy carbs (and protein)!

Our students made home-made pasta and Italian tomato sauce - lots of fun and SuPeR messy! 🍝

We made polenta, baked beans, potato pancakes, Hungarian potatoes, and mashed sweet potatoes. 🍠

Our students learned about the different types of grains and how we can incorporate them into a healthy diet 💪

We are so very proud of Lori Rupp for this achievement!

Dietetic Technician program student Lori Rupp has been named a 2026 Chime Workforce Scholar, joining 200 students nationwide recognized for academic achievement and pursuing career-focused education.

Funded by the Chime Scholars Foundation and administered by the Phi Theta Kappa Foundation, the Chime Workforce Scholarship supports students pursuing career and technical education at two-year colleges. Each scholar will receive $1,000 to help cover educational expenses while completing a certificate or associate degree that prepares them for a high-demand field.

Rupp has pursued professional development and community outreach opportunities while studying at CCAC. She earned a stipend to attend the Pennsylvania Academy of Nutrition and Dietetics Annual Conference by writing an essay on the event’s value. She also participated in a UPMC Northwest community wellness event, where she discussed healthy food choices, shared ways to incorporate fresh produce into meals and offered smoothie samples.

“We are thrilled to launch this new program and award hardworking students with Chime Workforce Scholarships,” said Amanda Karpinski Gorman, executive director of the Phi Theta Kappa Foundation. “These scholarships support students pursuing career and technical education at two-year colleges, and we look forward to seeing all they go on to accomplish.”

Phi Theta Kappa honors academic achievement at associate degree-granting colleges and provides members with opportunities to grow as scholars and leaders.

We had such a great time at CCACs 60th Anniversary Homecoming Celebration.

We had the opportunity to talk nutrition with the public, meet many alumni (even a few from the dietetics program back in the 80’s!), play some games, and paint some faces.

I’m truly blessed to have students come and volunteer their time to support the program. I’m so proud of each one of them.

Our past foods class focused on vegetables. Veggies are full of phytonutrients, fiber, minerals like potassium and magnesium, and lots of Vitamin C. We made a variety of veggies including:

🧅 Roasted Winter Vegetables (butternut squash, turnips, onions, carrots, and celery)

🥗 Brussels Sprouts with Walnuts

🫜Braised Red Cabbage (with bacon of course!)

Not only do we love cooking, but we love experimenting even more!

🥬 Did you know you can extract chlorophyll from spinach? We did just that with some isopropyl alcohol, a coffee filter, and spinach. The chlorophyll is rich in carotenoids, fat-soluble vitamins like A, E, and K, Vitamin C, and Magnesium. As the alcohol breaks down the chlorophyll, it moves up the filter in a ray of different greens and yellows!

Our first foods lab last week was all about fruits!

After we did a few experiments on the senses, we created a few healthy, delicious dishes.

We made:

🍓🫐 Greek yogurt filled Phyllo pockets with fresh fruit

🍑Stone Fruit Caprese Salad with fresh mozzarella and mint

🍇🍐Stewed fruit over Vanilla Bean ice cream

It was hard to pick a favorite but they were all packed full of flavor, antioxidants, and fiber!
