Nutrition students and hosted the first CARE in the Kitchen event last night and had a blast! 🥗🍝🍳
As part of their class, Nutrition Education students led a session on meal prepping, food safety and tips to make your food and budget last longer. Participants got to make dinner and prep their meals for the upcoming week while gaining comfort in the kitchen and building community!

We are hosting one more session on Dec 7- join us to prep meals for finals week so your brain is fueled for success!

10 College of Saint Benedict and Saint John's University students from the nutrition department presented their undergraduate research projects yesterday at Minnesota Academy of Nutrition and Dietetics State Conference! They were advised by Dr. Alexa Evenson. The students investigated a variety of aspects of GI symptoms, satiety, and breath hydrogen in response to inulin and gluten consumption. Hard work by all involved! These projects were funded by Undergraduate Research & Creative Work at CSB SJU!

Hi all, Professor Heying here! I’m planning on doing a supply run to donate hygiene products and food staples to two distribution sites in the twin cities helping neighborhoods who lost their grocery stores. Specifically, I hear places are running out of protein constantly and we ALL know how important that is!

If you’d like to donate to the supplies, my Venmo is and my PayPal is [email protected]. Even $5 helps — just think, if 20 people give at least $5, that’s $100 in food, shampoo, deodorant, you name it.

I plan to shop later tonight (Saturday) and drop off tomorrow. I’ll follow up with all who donate via Facebook messenger and verify that your funds went to the cause! Here’s an example of some of the needs the distribution site is looking for!

We are back and honoring another alum who’s been working hard to adapt throughout this pandemic! Bailey Weirens is an RD with The Emily Program in the twin cities and was nominated to be featured by fellow alum, Lacey Raser. Thanks for everything you do!

Here’s what Bailey has to say about adapting in her field over the past few months:

“COVID-19 has had a varying impact on each individual person. For those struggling with eating disorders it has commonly contributed to heightened symptom use, paired with a decreased ability to seek the level of care needed to support them. I am so proud that The Emily Program as a whole was able to transition all of their levels of care to telehealth (except residential). As an RD in a residential level of care, we have been challenged to find ways to adapt our programming – since we are no longer able to take clients grocery shopping and to restaurants, we are finding ways to support and challenge their eating disorders with order-in/take-out, intentional groups around grocery shopping skills, and individual sessions focused on preparation for life outside of The Anna Westin House.”
