Central Arizona College offers a Nutrition & Dietetic Technician Associate of Applied Science degree, which is available online and is accredited by the Accreditation Council for Education in Nutrition and Dietetics (ACEND).

The NDT program emphasizes medical nutrition therapy, education & wellness, and food service management. NDTRs work independently or in collaboration with Registered Dietitians Nutritionists in a variety of employment settings, including health care, business and industry, community, public health, foodservice and research. NDTRs are trained in food and nutrition and are an integral part of healthcare and foodservice management teams.

Central Arizona College now offers live-streaming Structured Literacy Courses that meet the training requirement for the K-5 Literacy Endorsement with the Arizona Department of Education.

- EDU320A Structured Literacy A: Science of Reading and Phonics (8 Week Class, Tuesdays from 4:30-5:45pm)
- EDU320B Structured Literacy B: Investigating Instruction, Assessment, Intervention, and Dyslexia (8 Week Class, Tuesdays from 6:00-7:15pm)

Both classes run 8 weeks, starting October 12 to December 5, 2026.

A certificate of training is provided with the successful completion of each course. After taking both courses, students are encouraged to register for the Foundations of Reading Assessment. The Arizona
State Board of Education has approved the training syllabus and documentation for Central Arizona College courses EDU320A and EDU320B as outlined by SB1572 and approved guidelines from the Arizona Department of Education.

Advance Your Career While Changing Lives with NEW ADE-Approved Mild/Moderate Disabilities Certification Pathways at CAC!

Central Arizona College offers coursework to meet part of the requirements for a mild to moderate special education endorsement on a valid Arizona teacher certificate for teachers with three years of teaching experience.

The requirements for the provisional special education endorsement (PreK-12 Disabilities) are:
• A valid Arizona Standard Professional Early Childhood, Elementary, Middle Grades, Secondary, or Special Education teaching certificate; and
•Verification of three years of full-time teaching experience in preschool through grade twelve; and
•Six semester hours of specified special education courses; and
•Verification of 15 clock hours of special education practicum, which may be embedded in the six semester hours of courses.

Courses are offered in a synchronous online format with weekly class sessions. After completion of two courses (ESE344 & ESE349) candidates are eligible to obtain a Provisional Mild/Moderate PreK-12 Disabilities Endorsement. Additional courses are offered at Central Arizona College to obtain full endorsement.
