2nd Semester is Back in the Kitchen!

Our 2nd Semester Culinary students got back into the kitchen and went straight to work building their skills!

This round was all about fruit preparation, knife skills, cooking techniques, presentation, and preservation. Students practiced breaking down and cutting a variety of fresh fruits while learning how different techniques can completely transform an ingredient.

🍐 Poached Pears
🍓 Fresh Fruit Platters
🥒 Quick Pickles

From learning proper fruit cuts and creating beautiful platters to poaching, baking, simmering, and pickling, they were able to take simple ingredients and turn them into something completely different.

And of course, there’s nothing quite like learning it by getting in the kitchen and doing it yourself!

Nutrition Final Kitchen Practical

Our culinary students went head-to-head in a brigade-style final kitchen practical!

Their challenge was to create a complete, nutritionally balanced ovo-lacto vegetarian meal and vegan dessert using ingredients on hand while determining what additional items were needed.

Each team had to convert their recipes to six portions, organize their mise en place, prep and cook within a time limit, and properly hold everything at temperature until service.

The catch? Once the practical began, they were on their own. No asking instructors for advice or help making decisions. They even had to pivot when team dynamics changed due to an absence, reorganizing responsibilities and figuring out how to keep moving forward.

🍴 On the menu:

* Fresh broccoli & vegetable salad
* Pesto linguine
* Herb-stuffed portobello mushrooms
* Black bean burgers on whole-grain buns with caramelized onions & mushrooms, Swiss cheese, and house-made mayo
* Mixed berry cobbler with an oat topping & banana ice cream
* Black bean fudge brownies finished with powdered sugar

They got a firsthand lesson in leadership, communication, adaptability, problem-solving, and teamwork—including what works, what doesn’t, and how to adjust when the original plan changes.

And after all of that… it was ALL delicious!

🍴 It’s been a busy week in Culinary Arts! 👩‍🍳👨‍🍳

Our students have been learning, tasting, and putting their skills into practice across all of our classes!

🥪 Second-semester students focused on sandwiches, dips, and hors d’oeuvres. They practiced making sandwiches to order, giving them hands-on experience following individual requests while working on organization, preparation, portioning, and presentation.

🥗 Third-semester students explored nutrition and dietary needs, learning how chefs must consider nutrition, allergies, intolerances, and dietary restrictions when developing recipes and preparing food. They put those lessons into practice by creating dishes that met different dietary needs.

🌿 Our Dual Credit students put their senses to work while learning about herbs and spices! They tasted and identified different flavors and aromas, explored how seasonings affect food, and learned just how important proper seasoning is when building flavor.

From understanding who we are cooking for, to preparing food to order, to learning how to build flavor, every lab gives our students another skill they can carry into the industry.

We love seeing our students learn through hands-on experiences—and have a little fun along the way! ❤️

We had a great first week kicking off the Fall semester in Culinary Arts at Texarkana College! 👩‍🍳👨‍🍳

Students jumped right into the semester with spices, rubs and marinades, exploring how different ingredients and techniques build flavor in the kitchen. We also began ServSafe and food safety training and worked through dietary corrections, learning how to make thoughtful adjustments for different dietary needs.

Of course, we made time for a little Welcome Week fun, too! 🎉

It was a busy and productive start to the semester, and we’re excited to have our new and returning students back in the kitchen. We’re looking forward to a great semester of learning, growing, and cooking together!

Playing photo catch up! The second semester students have been knocking out some delicious food!!! Soft scrambled eggs, French toast, Apple fritters, omelettes, waffles, muffins, biscuits, scones! Hamburgers, sliders, monte ciscos, and fruit cutting and tastings!

This week(we forgot photos😅) but they did ginger bread cookies, chocolate chip cookies, lemon sorbet and vanilla ice cream, sausages and ham pate!

What an incredible experience for our Texarkana College Culinary Arts students at the Texarkana Air Show!

This weekend, our students had the opportunity to assist with serving the VIP Dinner and lunch events, gaining valuable real-world experience in large-scale hospitality and event service. From guest interaction to teamwork and professional service, they represented Texarkana College with pride every step of the way.

A special thank you to Lagniappe Specialty Meats for providing the delicious meals. We appreciate the opportunity for our students to work alongside such a great event and be part of making the experience memorable for all of the guests.

We are so proud of our students for their professionalism, positive attitudes, and willingness to serve our community. Experiences like these help prepare them for successful careers in the hospitality industry.

Our beginning students focused on the foundations of cooking by preparing:
