During the academic year, the Scratch Cafe @ Culinary Arts is generally open from Tuesday thru Friday The Culinary Arts Certificate program combines classroom theory with hands-on training as you rotate through two-week blocks in a commercial-grade kitchen. In addition to our programs, our students run a number of retail and service businesses on campus, including the Scratch Café, Accolades Dining Room and the retail meat store.

Learning how to cook is more than just understanding the mechanics of cooking and baking. It’s also about understanding what you’re cooking and where it comes from. You can taste the difference when you buy cheap, low-grade products shipped from halfway across the world, compared to buying local.

When you support local, not only does it tend to be better quality, but it’s also more sustainable and helps build a stronger community. That is why our Culinary Arts students work closely with local farms and producers to understand where food comes from and all the steps required before it ever ends up on the table.

Congratulations again to the top three at this year’s BC’s Best Butcher Competition, held at TRU Culinary Arts over the weekend.

🥇 Tyler Wilson, Rangeland Meats
🥈 Morgyn Lutz, Chop N Block
🥉 Mike Jordens, Summit Gourmet Meats

18 butchers from across the province turned out for the 3rd annual event, judged on knife skills, food safety, and how well they used the cuts they were given. The finalists then had 45 minutes to break down a half sheep.

It came down to the wire, the preliminary scores showed just a 20-point spread between first and eighteenth. Four of the top five were from the Kamloops area, and Tyler Wilson became the competition’s first champion from right here at home.

Proud to have hosted it on campus. Well done to everyone who competed.

This past weekend TRU Culinary Arts hosted the 3rd annual competition.

It was a great one! So much fun to watch the competitors work through each round, with the final round being half a lamb.

A huge congratulations to our top three:

🥇 First place, Tyler Wilson
🥈 Second place, Morgyn Lutz
🥉 Third place, Mike Jordens

We’re extremely proud of everyone who competed. A special mention to Benny Kerner, Amber Corbett, Morgyn lutz and Kyla McLauchlin who are all TRU alumni, there’s something pretty special about watching former students come back and compete at this level.

Thanks to everyone who took part and helped pull the weekend together.

We’re looking for someone who’s passionate about the meat-cutting trade and wants to help train the next generation entering the industry.

TRU Culinary Arts is hiring a sessional faculty member for our Retail Meat Processing program starting this fall in Kamloops. As the only meat-cutting program in British Columbia, this role is a chance to be part of something pretty special, sharing real industry knowledge, working closely with students and helping grow the trade in BC.

We’re looking for someone with strong hands-on experience, leadership skills and a commitment to high-quality training both in and out of the classroom.
